Cheesy Vegetable Pasta recipe

Here is a recipe for making Cheesy Vegetable Pasta:

Ingredients:

  • 1 pound of pasta (spaghetti, penne, or any type of pasta you prefer)
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 2 cups of mixed vegetables (broccoli, cauliflower, zucchini, etc)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup of grated cheese (cheddar, mozzarella, or a mix of your choice)
  • 1/4 cup chopped fresh parsley or basil (optional)

Instructions:

  1. Cook the pasta according to the package instructions until it is al dente. Drain and set aside.
  2. In a large skillet or pan, heat the olive oil over medium heat. Add the diced onions and cook until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced bell pepper, mixed vegetables, dried basil, dried oregano, salt, and pepper. Cook for 5-7 minutes or until the vegetables are tender.
