Here is a simple recipe for making mixed veg pakora:
Ingredients:
- 1 cup gram flour (besan)
- 1/4 tsp red chili powder
- 1/4 tsp cumin powder
- 1/4 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp ajwain (carom) seeds
- salt to taste
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped spinach
- 1/4 cup finely chopped potatoes
- 1/4 cup finely chopped cauliflower
- 1/4 cup finely chopped eggplant
- Oil for deep-frying
Instructions:
- In a large mixing bowl, combine the gram flour, red chili powder, cumin powder, coriander powder, turmeric powder, ajwain seeds, and salt.
- Slowly add water to the mixture and stir until it forms a thick, smooth batter.
- Add the chopped vegetables to the batter and mix well.
- Heat oil in a deep-fryer or a large pan to 350°F (175°C).
- Using your hands or a spoon, drop small portions of the batter into the hot oil. Fry the pakoras until they are golden brown and crispy.
- Remove the pakoras with a slotted spoon and place them on a plate lined with paper towels to remove excess oil.
- Serve the mixed veg pakoras hot with chutney or tamarind sauce.
